As the commercial, cultural capital of the Americas, Miami’s restaurant scene reflects diversity, blending exotic new restaurants with long-standing ones, often seasoned by Latin influence and warm Caribbean winds. New World cuisine is a culinary counterpart to accompany the Miami New World Symphony, offering a broad fusion of Latin, Asian and Caribbean flavors using fresh, area-grown ingredients. Innovative restaurateurs and cooks similarly attract customers with Floribean flavor ofseafood and fish, while staying true to Florida’s original favorite tastes, sometimes called “cracker cookin.” Among the most famous luxury restaurants in Miami is Norman, created by Chef Norman Van Aken, and Chef Allen’s in Aventura, named after Allen Susser, creator of his famous five-course menu to try. Joe’s Stone Crab, on the southern tip of South Beach, presides as the king of the crab, most recently, heading out to sea with his annexes aboard Carnival ships. Another institution, The Forge, is known for its antiques, exquisite art objects, and a 300,000-bottle wine cellar. Tasty Cuban cuisine is served in hundreds of coffee shops and wineries in and around Little Havana, while Colombian, Nicaraguan, Puerto Rican and other Latin flavors are easily found. Early Bird dinner specials, always popular with retirees, remain plentiful in Miami. However, dining out is an essential part of Miami’s nightlife, and there’s no need for anyone to be afraid of restaurants closing shortly after sunset. In fact, that’s when eclectic South Beach starts sizzling.
